For Cajuns and Catholics alike today marks the Celebration of Fat Tuesday . It is the day before Ash Wednesday and the beginning of Lent , leading up 47 days before Easter Sunday. Traditionally most people celebrate by eating richer fatty foods before the ritual fasting of Lent. The practice of eating pancakes on Fat Tuesday grew out of the historical need to use up the bacon, fat, eggs and dairy that are forbidden during lent. So…Bon temps and don’t forget the syrup!
